A note, from Sara

I'm Sara, (also known as Bunhead) - the founder and head baker at Bunhead Bakes. 

I started Bunhead in the midst of pandemic and lockdown pandemonium, and by the grace of good people (and really good buns), we’re still here. With Bunhead, has come some wonderful opportunities. A scholarship for a course at Leith’s School of Food and Wine, markets, collaborations, pop ups at The Shard and The Hoxton Hotel - but more than anything, the honour of building a family of Bunheads!

But my background was not in hospitality. I’ve not been to culinary school or worked in professional kitchens, I am proud to say I am a totally self-taught baker! I studied at Film School and worked in TV for a time after graduating but quickly discovered it wasn’t for me. I did a stint of travelling, worked in accounting, spent some time working with youth hostels and then with rough sleepers. I’ve had a lotta jobs, and lived a lotta life, but food has always been my anchor. It’s the thing I have always returned to and having suffered with anxiety and PTSD, it has served as my meditation and has always brought me joy.

Palestine, South London and food are essentially the pillars of my personality but growing up I found it hard to connect with people who shared my experiences or background. Through Bunhead Bakes, I've been able to build a community of like-minded humans who are all about embracing the joy of eating and learning about culture through food. Being able to blend the 3 has and continues to be the biggest privilege of my life.

So, what started as an opportunity to spread a little joy during lockdown has become a way for me to explore my creativity and share my love of Palestinian flavours and culture with London, one bun at a time. I use sourdough methods along with the freshest, organic ingredients to create baked goods that not only taste amazing but also connect people to the rich history and flavours of Palestine. I believe that by sharing my culture, I can build awareness whilst bringing people together in a spirit of joy and celebration.

A NOTE, FROM GEORGIA

I'm Georgia, the best friend that Sara has teamed up with to turn her home-based bakery – Bunhead – into a bricks-and-mortar establishment. Sara and I met on the first day of university and took our first steps towards becoming lifelong friends when we hit the dance floor later that night and got hyped to KRS-One's Sound of da Police.

I have worked in corporate jobs for most of my career, but – eventually – I transitioned to a role as a consultant at a Diversity, Equity, and Inclusion start-up that aligned more with my values. Fast forward to mid-2023, and I'd decided to leave my job and make a fresh start elsewhere. While figuring out my next steps, I started working at a local artisan coffee shop… and I found myself loving every second of it.

I'm fascinated by the care that can go into making a single cup of coffee, and I love chatting with people while I work. Looking back, it all makes sense, given my report cards from school always read: "Bright but needs to stop talking during class."

My corporate background has equipped me with a solid foundation in strategic planning, operations, and team management, all of which I'm applying to ensure our bakery is as efficient and sustainable as possible.

Ultimately, my goal is to provide an exceptional customer experience and spread good ✨vibes✨ while you enjoy your buns, hun.
